Half cooking plate with grate for Cookking fire bowl - 3 sizes

This plate covers only half the fire bowl. That is deliberate, and it is what makes it interesting : you cook on one side while the fire stays open and visible on the other. It comes in three sizes, for hearths of 60, 80 and 100 cm.

The half that stays open

With a full plate, the hearth disappears under the steel. Everything has to come off — hot and heavy — to put a log back. Here, the other half of the fire bowl stays clear: you feed it one-handed, you see the flames, and the fire goes on warming the room the way a fire bowl should.

It is the compromise many people look for without finding it: a real cooking surface without turning a fire bowl into a cooker.

Smooth on one side, grated on the other

The half surface is itself divided in two. A smooth part, for everything that would run through bars: eggs, pancakes, sliced onions, small vegetables. A part of diamond-pattern grate, where the flame reaches the food and marks the meat.

You can therefore cook things of opposite consistencies at the same time, which neither a full plate nor a grate alone allows.

Three details that count in use

A rim runs along the inner edge: food does not slide into the hearth. It is the kind of detail you notice only when it is missing.

The plate rests inside the bowl, bearing on the edge. The direct consequence: fat and residue go towards the fire and burn there, instead of running down the outer wall. The fire bowl stays clean on the outside.

Lastly, the central opening works as a handle. You take hold of the plate there to lift it off, and it is also where you push cooking residue towards the flames.

Choosing a size, and checking it fits

The size is taken from the diameter of your hearth, not from the plate : 58 cm for a 60 cm fire bowl, 78 cm for an 80, 98 cm for a 100. The widths follow — 29, 39 and 49 cm — since this is a half-disc.

One point not to overlook : the 58 and 78 cm sizes are given as compatible with eleven models of the brand — BALI, POLO, VIKING, INDIANA, SANTIAGO, PANAMA, BANDITO, PALMA, PALERMO, HAITI and MONTANA. The 98 cm covers only six: BALI, POLO, VIKING, INDIANA, SANTIAGO and PANAMA. If your hearth is 100 cm, check that it is on that list before ordering.

Plain steel, 3 mm

The steel is 3 mm in all three sizes, for 3, 5 or 8 kg depending on the diameter: mass enough to hold the heat and not to warp. It is plain, with no coating, and approved for food contact.

Two consequences to know. The shade varies from one piece to another — that is the nature of plain steel, the maker says so, and it changes nothing in use. And it rusts if left wet : wipe after use, store dry, oil before winter.
