This barbecue hangs a round steel grill above the fire, on a tripod 200 cm high. No bowl, no lid, no thermostat : a fire on the ground, a grill on a chain, and height as the only setting.

Height is the thermostat

On a closed appliance you set the temperature with a dial. Here you set it by raising or lowering the grill on its chain. Lower to sear a rib of beef, higher to finish vegetables or keep a dish warm while you serve.

It is a knack learned in one evening, and it gives far more room to manoeuvre than a lid : you see what is happening, you correct straight away, and you never cook blind.

Four diameters, and the choice matters

The grill comes in 50, 60, 70 and 80 cm. This is not a comfort detail, it is the number of guests you can serve in one go. Reckon on a grill of 50 cm for two to four people, 60 cm for four to six, and move up to 70 or 80 cm if you entertain regularly, or if you want to be able to push cooked pieces to the edge while the rest finishes.

Going too big does no harm to the cooking, but the fire has to match : a 80 cm grill lit by a small heap of embers only heats through the middle.

Five millimetres of steel

The bars of the grill are 5 mm thick. That is a figure you feel in use : a thick grill stores heat and gives it back on contact, which marks the meat instead of cooking it limply. Nor does it warp when you set a full casserole on it.

The tripod is powder-coated, a cured finish that stands up to damp and to seasons outdoors better than paint.

Wood or charcoal, and it folds

The fire is built on the ground, with wood as readily as charcoal. Wood means waiting for embers — allow a good half hour — but gives a taste charcoal does not. The three legs stand on any flat surface, grass included.

Out of season, the tripod folds in half. It then fits into a garden shed or a car boot, which makes it portable where a wheeled barbecue will not go : a meadow, a beach where fires are allowed, a house rented for the weekend.

The legs carry forged details and the head is worked into scrolls : the object is visible in a garden, it is not neutral. It is made in Europe.
