    This ancient variety of chicory, from Italy, is hasty and resistant to disease. Its dark leaves are rounded, thick, tender and tasty. They form adorable tight apples that look like roses.

    Tip Vilmorin: The leafy chicory likes the proximity of cauliflower, because this combination saves space and watering.

    The first seedlings can be harvested at the young shoot stage, after 30 days, or at maturity, once the rosettes are formed, after 50 days.
