This variety of onions with a white colour covered with pearly reflections, typical of the Cevenole region, produces beautiful bulbs with white flesh, known for their very sweet flavor. Cenol onion is ideal for summer harvests. It is particularly suited to the territory of the Cévennes, where the steep slopes and the irregular climate have led, since the Middle Ages, to the practice of terraced cultivation.
